Jammy yolks, soy-vinegar marinade — cooked for the water in your pot
Ramen eggs (ajitsuke tamago) fail at elevation for a boring reason: the marinade cannot fix a yolk that never reached jammy in the pot. Sea-level “6 or 7 minutes” leaves you with a soft egg that soaks up soy and still runs. Time the boil with the boiling eggs at altitude calculator set to jammy, then marinate.

Boil for jammy, not for the marinade
Use the jammy method with your real altitude. Fridge-cold large eggs in already-boiling water are the usual case; extra-large eggs and a crowded pot need the extra time the calculator already adds. Hot-water start keeps the clock honest.
Immediately put cooked eggs in cold water to make them easy to peel. Ice water for a few minutes also stops them from cooking further in the shell, which matters more after the extra time altitude already added.
Peel while they are cold. Jammy whites tear if you fight a warm shell. A small crack all over, then peel from the wide end under water.
Marinade
The soak is salty-sweet and a little sharp. It seasons the white more than the yolk. Cool the marinade before it touches the eggs so you do not keep cooking them.
Ingredients
- Eggs (large, or match the carton on the calculator)
- 1½ cups water
- ⅓ cup soy sauce
- ¼ cup rice vinegar
- 1 tsp red pepper flakes
- 2 Tbsp sugar
Steps
- Boil eggs to jammy doneness with the altitude calculator, then ice-bath and peel.
- Combine water, soy sauce, rice vinegar, red pepper flakes, and sugar in a small saucepan.
- Heat over medium, stirring until sugar dissolves. Remove from heat and let cool.
- Place peeled eggs in a zip-lock bag or container and pour marinade over them.
- Refrigerate for at least 4 hours, or overnight for best flavor.
Flip the bag once if the eggs are stacked. Overnight is better than four hours. They keep a few days in the fridge in the marinade; the whites get saltier the longer they sit.
If the yolk is wrong
Still runny after the soak: the boil was short for your elevation, not the marinade. Detect altitude on the calculator and match egg size before you add “another minute” by habit. Fully set: you cooked past jammy — use hard-boiled for deviled eggs or egg salad instead of forcing a ramen egg.
