🥚 High-altitude hard-boiled eggs
A fully set yolk needs the biggest time bump when the pot is cooler
What “hard” means here
High altitude hard-boiled eggs are the same fully set yolk you want at sea level — no jammy ring, no chalky green edge if you stop on time. The white is firm enough to slice and mash. That is the doneness for packing lunches and for deviled eggs and egg salad.
Do not reuse a sea-level “12 minutes” rule and hope. At elevation the water is not 100°C, so the center is still catching up when a sea-level clock would already be done. Time them with the boiling eggs at altitude calculator, set doneness to hard, and cook to that result — not to a round number you memorized at the coast.
Why high-altitude hard-boiled eggs take longer
Yolk proteins need more heat than whites to finish. A soft yolk can look “close enough” a minute early. A hard yolk that is a minute early is still jammy in the middle — which is fine if you wanted jammy, and wrong if you wanted to mash it with mustard.
Every 300 meters (about 1,000 feet) knocks roughly 1°C (1.8°F) off the boiling point. The calculator’s model adds about 3% cook time per degree below 100°C. On a large fridge-cold egg in already-boiling water, that is a few extra minutes in Denver compared with sea level, not a few extra seconds. Extra-large eggs and a crowded pot add more.
Hot-water start is still the more precise clock: you know when cooking begins. Cold-water start is gentler on shells; the calculator already adds time for the heat-up. Leave the lid off so the water stays at a true boil instead of trapping steam and guessing.

Pan-side routine
- Enter altitude, large (or whatever matches the carton), hard, fridge or room-temp, hot or cold start, and egg count on the boiling eggs at altitude calculator.
- Lower the eggs in with a spoon so they do not crack on the bottom of the pot.
- Start the timer when the calculator says the cook begins.
- When it ends, move them out of the hot water immediately. Carryover heat in a hard-boiled egg is how you get a dry yolk and a gray ring.
Immediately put cooked eggs in cold water to make them easy to peel. Ice water for a few minutes also stops them from cooking further in the shell, which matters more after the extra time altitude already added.
Peel under a trickle of water if the shell still clings. Older eggs often peel cleaner than very fresh ones; altitude does not change that, but the ice bath does.
Food safety at high elevation
Above about 3,000 m / 10,000 ft, boiling water can sit below 90°C (194°F). Eggs may still firm up and still miss temperatures you would want for a packed lunch. The calculator warns at those elevations. A pressure cooker raises the boiling point if you need a fully set, safer egg up there.
